Cara Cara Orange and Bloomsdale Spinach Salad
Serves 6
3 large Cara Cara oranges (or your favorite citrus) sectioned
1 lb Bloomsdale spinach
4 each Spring onions, cut in quarters and roasted
1/4 cup grated ricotta salata cheese

This week on Good Food, hear about Eddie Lin’s urban foraging experience.  Afterwards, Eddie made a salad with naturalist Joel Robinson and Delilah Snell of The Road Less Traveled.

Here is Delilah’s salad dressing recipe:
1/3 c. olive oil
1/4-1/3 c. lime juice (or lemon/orange)
1/4-1/3 c. vinegar (balsamic/ white wine/ red..)
* personally, i just do a “by eye” each of the above 3 parts
1-2 cloves garlic/shallot sliced thin
salt (or for me, spicy salt!)
pepper (wild gathered, roasted)
tsp + mustard power
shot of agave or honey…to taste
