In the first installment of our 2016 Piecast, Dan Pashman, host of WNYC’s The Sporkful podcast, makes the case for square instead of round pie. Here’s why I’m with Dan.
George Abou-Daoud of Urban Garden gave us this Spinach and Feta Pie.
It uses filo dough, sumac, and a blend of herbs like cinnamon, cardamom, and coriander.
Abou-Daoud recommends using feta cheese from Greece or Lebanon. He says it’s much tangier than imports from France or Bulgaria.
Today’s pie makes us sad. Sad that we’re a long way away from pot pie weather.
Then again, we do have air conditioning here at KCRW, and Heather Christo’s Chicken and Guinness Pot Pie is pretty tempting…
