Bill Esparza is Good Food’s taco correspondent. He refers to himself as the first ever “tacorazzo” and he writes about tacos and street food for Los Angeles Magazine and on his blog Street Gourmet LA.

This week on Good Food he discusses barbacoa, the tradition of pit-roasted barbecue in Mexico. Most often it’s lamb, but you can find everything from goat to chicken barbacoa in Los Angeles. In fact, Bill says there are more diverse barbacoa offerings in Los Angeles than there are in Mexico City. Some of his favorite spots are:

Aqui es Texcoco in the city of Commerce

Gish Bac in Arlington Heights

Tacos Quetzalcoatl in East LA

If you love tacos as much as Bill does, buy your tickets for Tacolandia. The annual taco-fest is curated by Esparza who brings in some of the best taqueros from Southern California and Mexico.
