Recipe: Alice Medrich’s Buckwheat Linzer Cookies

I’ve always had an affinity for buckwheat and its earthy flavor. Before I rid of my lawn I even grew it as a cover crop right here in the middle of Los Angeles. When buckwheat is ground into flour it’s color is extraordinary and unusual. In this recipe from Alice Medrich’s new book Flavor Flours, she pairs buckwheat with the rich sweetness of butter to create a sandy sablé cookie. I think its a particularly beautiful cookie, at once familiar and just different enough to seem special for the holidays especially when paired with a purple or red jam. Like all of the recipes in Alice’s new book, this cookie is gluten-free.
