This Week on Good Food: Breakfast, the Most Important Meal of the Day

Evan Kleiman celebrates porridge, coffee, pancakes and all things breakfast with René Redzepi, Jonathan Gold and other guests who share her passion for the first meal of the day.

Highlights from this week’s show:

1. Seb Emina, author of The Breakfast Bible, talks about how a lack of breakfast coverage in the media inspired his obsession with the first meal of the day.

2. Dan Shumski is the author of the blog Waffleizer, a digital celebration of cooking anything but waffles in a waffle iron. Recipes on his blog include Waffleburgers, S’moreffles, and waffled chocolate chip cookies. Find a recipe for waffled chocolate chip cookies here.

3. René Redzepi, Danish chef and co-owner of two-Michelin star restaurant NOMA, tells Evan Kleiman about why breakfast is his favorite meal and time of the day. He also discusses his preference for hot breakfast and his first vivid food memory.

4. John Boa is the 2011 winner of the 19th Annual Golden Spurtle World Porridge Making Competition. He explains what a spurtle is and shares tips on how he likes to make his porridge.

5. Michaele Weissman journeyed inside the world of specialty coffee in search of the perfect cup.  She traveled to coffee-growing regions in Nicaragua, Panama and Ethiopia with Peter Giuliano of Counter Culture, Geoff Watts of Intelligentsia and Stumptown‘s Duane Sorenson.  Michaele explores the relationships between the producers, buyers and consumers in her book God in a Cup.  One of the best coffee varieties she found is Hacienda La Esmeralda‘s Geisha coffee from Panama, which costs $130 per pound.

7. Chris Phelps and Zak Walters are the chefs at the West Hollywood breakfast spot Salt’s Cure, a restaurant known for their use of locally sourced ingredients.

8. Laura Avery talks to Felix Schweizer, a concerned customer of Lindner Bison, who is helping Lindner Bison save their bison ranch. Lindner Bison is a fixture at the Wednesday Santa Monica Farmers’ Market that has about two weeks left in their Indiegogo campaign in which they are crowd-sourcing funds to fix their broken well.
