In this outtake Magnus Nilsson, chef/owner of Faviken in Sweden, describes clamping. Clamping is an old technique to store root vegetables that was used prior to the invention of the root cellar and refrigeration. This is just one example of the unique methods that Nilsson employs at his 12 seat restaurant in a remote area of Northern Sweden.
