Where can I find good leaf lard locally?

photo-300x225I’m a big fan of leaf lard.  It makes an amazing pie crust.  Here’s a recipe for a peach pie I made with leaf lard in our first Pie-a-Day project.  The two places I know you can get leaf lard are at Surfas in Culver City or at Cube Cafe and Marketplace on La Brea. Call Surfas in advance because they sell out quickly, especially during pie centered holiday times. Cube sells the beloved Wooly Pig lard for $16 for a 4 lb. tub. Split it with a friend or find room for it in the refrigerator.  Good Food producer Harriet Ells was shopping at Lindy & Grundy the other day and asked about leaf lard.  Erika, one of the owners, said that they just need some notice.  You might also call McCall’s Meat and Fish Company.

Leaf lard is the fat of the hog which lines the abdomen and kidneys.  It’s considered the highest grade of lard available.  Read more about it here.

    One thing worth noting: the lard at Surfas is un-rendered (last time I bought it at least), and needs to be rendered before using (I generally use a microwave for rendering). I suspect Cube's comes pre-rendered (since it's in tubs). A butcher like Lindy & Grundy or McCall's will most likely carry the un-rendered stuff.

      I actually saw the leaf lard at Surfas. My mother was with me and said something like "I think you have to render it yourself." This scared the bejesus out of me…I think I'll try Cube.

    McCall’s sent out a tweet last week saying they had Wooly Pig Leaf Lard. I’m not sure if there is any left but it’s worth a phone callif you live on the east side of town.

    What i don’t understood is actually how you’re not really much more well-liked than you may be now. You’re very intelligent. You realize thus considerably relating to this subject, made me personally consider it from a lot of varied angles. Its like men and women aren’t fascinated unless it is one thing to do with Lady gaga! Your own stuffs great. Always maintain it up!
