Roasting the Whole Animal with La Caja China

Tender Greens is hosting monthly whole-animal roasts at their West Hollywood location.  Eddie Lin went to their last goat roast (you can hear that this week on Good Food).  Chef Eric Hulme used a Cuban-style La Caja China, to roast the animal.  Here is La Caja’s appearance on Bobby Flay’s show and he does a great job of explaining how it works (although pig is featured):
