Beefalo is a cow/buffalo hybrid that makes a tender, low cholesterol beef. Evan chats with beefalo rancher Mark Merrill this week on Good Food. A recipe is after the jump…
Beefalo Chili Rojo Con Carne
1 lb ground Beefalo
1 oz canola oil
2 oz chili powder
3/4 cup chopped onion
1/2 Tablespoon garlic
1-1/2 cup diced tomatoes
1 Tablespoon vinegar
1 tsp ground coriander
1/8 tsp ground cloves
1 tsp cumin
1 Tablespoon oregano
2 tsps brown sugar
3 cups beef consomme
12 oz drained red kidney beans
12 oz drained pinto beans
Brown Beefalo in canola oil in a deep pan. Add onions and cook until tender. Combine all ingredients in pan and simmer for two hours.
