Butternut Squash Gratin! So versatile, in addition to the parm, you can add goat or bleu cheese and so many herbs lend themselves to the dish – sage, rosemary, thyme! The sky's the limit! Only downside? Noooot low cal.

Savory butternut squash pie. Roast the squash with thyme. Add a teeny bit of brown sugar and butter. Put in a tart shell with sea salt and parmesan. It's a little sweet, a little salty, buttery, warm and parmesany…

Peel and slice the butternut squash into thin wedges that run the entire length of the squash. In a pie plate, mix flour, kosher salt, freshly ground black pepper and grated Parmigiano, and whisk an egg into another one. Coat the squash wedges with egg, then with flour/parm mix, then pan-fry briefly on both sides. Fan out a few slices on each plate, dress with a simple butter-sage sauce or a quick tomato sauce, then shave Parmigiano over the top.

Butternut Squash Tart! Tthe parm can either be grated and go into the crust to give it a salty kick, or shaved in a few delicate curls on top for gorgeousness; or both! If you have time, a few whole fresh sage leaves, fried, would be a delectable garnish, or if no time, some chopped thyme in the body of the tart would be nice. Freshly ground nutmeg, some cream, an egg or two, and you have a simple appetizer (served in a slim slice), or a wonderful lunch or light dinner served alongside a salad of mixed peppery greens. When do we eat? I am so hungry! (Dorothy at Shockinglydelicious.com, channeling her inner pie girl.)

i'd do a nice sautée of the butternut squash atop a nice fillet of beef/steak. i'd use the flour to dust the steak to give it a great coating and crisp. making sure not to sautee the butternut squash too much i'd keep the squash firm and beautiful making a very pretty presentation over the fillet :) then lastly with the parmesan i would grate it lightly on top. with a few nice sides of starches and more colorful vegetables that is one gorgeous plate! well, i just made my grocery list for tonight haha and i think my boyfriend will be very excited yummm.
